Beef, Chicken or Vegetable Empanadas

These golden, flaky pastries are filled with a savoury blend of ingredients, offering a taste of tradition and comfort in every bite. Perfect for a snack, appetizer, or light meal, this empanada recipe combines simple ingredients to create a delicious and satisfying treat that will surely become a favourite at your table.

Ingredients:

For Dough:

3 cups flour
½ tsp salt
¾ cups cold butter
2 eggs
⅓ cup ice water

For the Fillings:

454 g ground beef or chicken
  ▸ For vegetarian, add 3 cups of cooked quinoa
3 hard boiled eggs
½ carrot
1 red bell pepper, diced
½ red onion, diced
1 cup corn, frozen or canned
1 cup black beans 
1 tbsp cilantro 
½ tbsp smoked paprika
½ tbsp ground cumin 
½ tbsp dried oregano 
Salt 
Pepper 

 

Preparation:

For Dough:

  1. Add flour and salt to a food processor and mix.
  2. Add butter and mix until all is crumbled.
  3. Add eggs and mix until all is combined.
  4. Finally, add ice water and mix until it slightly forms a dough. Wrap in cling wrap and place in fridge to rest for 30 minutes.
  5. Before rolling dough, take out of fridge and let come to room temperature for about 10 minutes.

For Filling:

  1. In steam-oven under Automatic Functions, select eggs and follow instruction for hard boiled eggs.
  2. In a pan, cook beef/chicken with smoked paprika, cumin and oregano till browned. 
    • For vegetarian, cook quinoa in Combi-Steam under automatic functions → grains → quinoa, then follow directions.
  3. Add onions and cook until translucent, then add bell peppers and let cook for 2 minutes.
  4. Add beans, corn and cilantro. Mix well and season to taste.
  5. Place filling in bowl and set in fridge to cool.

Assembling Empanadas:

  1. Roll dough to about an 8th of an inch using a 3 ½" circle cutter to cut into shape.
  2. Egg wash inside the edges of the dough and add about 1 - 1½ tbsp of filling into the center of the dough.
  3. Fold over dough and press edges together to seal the empanada.
  4. Crimp edges to properly seal.
  5. Place in a universal tray and egg wash
  6. To bake Empanadas:
    • In Combi-Steam Oven, go to Operating Modes → Combi-Steam function, set temperature to 375°F with 60% moisture and bake for 25 minutes
    • In 30" oven, go to Operating Modes → Moisture Plus function → Moisture Plus Combi Bake, set temperature to 375°F. Use Automatic setting for moisture feature and bake for 25 minutes.
