Cheese Gougères

These light and airy French cheese puffs are baked to perfection, boasting a crisp exterior and a wonderfully cheesy, tender interior. Cheese gougères are a delightful way to elevate any gathering with a touch of gourmet flair, perfect as an appetizer, snack or party treat.

Ingredients:

1 cup water
⅓ cup butter
1 cup all-purpose flour
4 eggs
1 tsp salt
1 tbsp dried fines herbs
70g grated gruyere cheese.

 

Preparation:

  1. Add butter and water to saucepan and bring to boil on high heat.
  2. Once boiling, add flour in 2 parts, stirring with spatula to create a thick paste.
  3. Turn heat down to low-medium, and cook the paste for another 1-2 minutes, smearingthe paste with the spatula, and scraping the sides the entire time.
  4. Remove the hot paste and put into the bowl of a mixer.
  5. Using paddle attachment, bring to a medium-high speed.
  6. While mixer is running, add eggs one at a time, incorporating each egg for about 10-12seconds.
  7. Mix until all eggs are incorporated and the paste is sticky and glossy, then add the cheese and herbs and transfer to a piping bag.
  8. Pipe while hot into desired shape and size.
  9. Bake in a Convection 375 oven, until firm and golden brown. Burst of steam optional.
