For Brine:
1200 mL water
1 boneless, skinless, defrosted turkey breast,
6 springs thyme
1 tsp whole black peppercorn
¼ cup brown sugar
½ cup sea salt
1 tsp dried rosemary

For Stuffing:
500 g dried bread pieces
400 ml turkey stock
2 tbsp butter
½ cup diced apple
½ cup diced celery or fennel
½ cup diced onions
1 garlic clove
1 tsp ground sage
1 tsp fresh cracked pepper
1 tsp rosemary
1 whole egg
