Stuffed Turkey Breast

A delicious and elegant alternative to a traditional roast

Use the Sous Vide mode in your Miele Combi-Steam Oven for a unique spin on a classic turkey dish.

Combine rustic flavors with modern techniques to make a show-stopping dish that’s sure to impress. Stuffed with a savory mixture of dried bread, sautéed apples, onions, celery, and fragrant herbs, then cooked sous-vide for perfect, even doneness, the turkey is finished with a golden butter glaze, delivering juicy slices of tender meat paired with the aromatic stuffing.

Ingredients:

For Brine:

1200 mL water
1 boneless, skinless, defrosted turkey breast,
6 springs thyme
1 tsp whole black peppercorn
¼ cup brown sugar
½ cup sea salt
1 tsp dried rosemary
Makes 1L of brine, enough for 1 breast

For Stuffing:

500 g dried bread pieces
400 ml turkey stock
2 tbsp butter
½ cup diced apple
½ cup diced celery or fennel
½ cup diced onions
1 garlic clove
1 tsp ground sage
1 tsp fresh cracked pepper
1 tsp rosemary
1 whole egg



Preparation:

For Brine:

  1. Add all ingredients to a small saucepan.
  2. Steep on the stove until salt and sugar is dissolved, do not reduce.
  3. Let cool.
  4. Lay defrosted turkey breast in a large container and pour cooled brine over top until fully submerged.
  5. Let sit for 12-24 hours.
  6. Take out, dry, and set aside for rolling

For Stuffing:

  1. Heat butter in pan and sauté garlic, onion, celery, apple, sage, pepper and rosemary.
  2. Cook until translucent but do not brown.
  3. Add turkey stock. Stir to incorporate.
  4. Add dried bread to large mixing bowl and pour mixture over the bread.
  5. Add eggs and mix well.
  6. Push to the bottom of the bowl, to let hydrate evenly for approximately 20 minutes.

For Rolling the Turkey Breast

  1. Set a thick layer of plastic wrap on a clean but damp counter.
  2. Lay turkey breast down, then add stuffing on top into the shape of the turkey breast, about ½ inch thick.
  3. Using the plastic wrap, roll the breast tightly and be sure the turkey breast is covered entirely by the plastic wrap.
  4. Gently push down and roll.
  5. Twist the plastic wrap tight and synch ends with butchers' twine if needed.

For Cooking Turkey by Sous Vide:

  1. Select the sous vide mode of your Miele Combi-Steam Oven to 160 °F.
  2. Preheat and place turkey breast (still rolled in saran wrap) on a perforated tray.
  3. Cook for 1.5 hours and chill immediately.
  4. Unroll turkey breast carefully and place on a roasting tray, stuffing side up.
  5. Brush with melted butter.
  6. Rest, slice and serve.
