½ cup oatmeal (non instant)
½ cup all-purpose flour
½ tsp cinnamon
¼ tsp salt
6 tbsp cold, unsalted butter, cubed
Vanilla ice cream, for serving

For Caramel Sauce:

1 cup white sugar
¼ cup water
6 tbsp unsalted butter, cut into pieces
½ cup heavy cream
Pinch of salt
1 tsp vanilla extract

Preparation:

  1. Preheat the Speed Oven: Convection Bake to 375 °F.
  2. In a small bowl, whisk together the brown sugar, oatmeal, flour, cinnamon and salt. Add the butter and rub together with your fingertips until the mixture resembles coarse crumbs.
  3. Line a glass tray with parchment paper. Slice the pears in half lengthwise. Hollow out about 1 Tbsp in the middle of the pear.
  4. Fill the pear with the crumb topping, and place on the glass tray.
  5. Place the tray in the Speed Oven, Shelf Level 2. Select Operating Modes/Combination Bake and Broil. Set the Power Level to 3the Temperature to 375F and the duration for 20 minutes. Press Start.
  6. In the meantime, make the caramel sauce: Add the sugar and water in a saucepan over medium heat. Stir until just combined and let the sugar melt to a light amber colour.
  7. Carefully add the butter and whisk until all the butter has melted.
  8. Remove the saucepan from the heat and slowly pour in the cream, whisking constantly until all the cream has been incorporated. Let cool.
  9. When the pears are ready, remove from the oven. Place a pear on a plate, drizzle with the caramel sauce, and serve with a scoop of vanilla ice cream
