Discovered on a visit to Crete, this recipe stands out for its unique combination of flavours. It’s a crowd-pleaser and surprisingly easy to prepare, making it a favourite for entertaining.
Ingredients:
1 block of halloumi cheese, cut into 1-inch slices
A handful of seedless green grapes
Greek olive oil
Aged balsamic vinegar
A handful of roughly chopped pistachios
A handful of fresh basil, finely chopped
A handful of fresh mint, finely chopped
Sesame seeds
Maldon salt
Black pepper
Microgreens
Baguette
Preparation:
- Prepare the Vinaigrette: In a mixing bowl, combine olive oil, aged balsamic vinegar, pistachios, sesame seeds, basil, and mint. Season with salt and pepper. Set aside.
- Sear the Halloumi: In a non-stick skillet over high heat, add a touch of olive oil. Sear the halloumi on one side for about 2 minutes or until golden brown. Flip and cook the other side for 90 seconds, or until golden brown. Set aside.
- Roast the Grapes: In the same skillet, add a touch more olive oil and the grapes. Season with salt and pepper, and cook for about 2 minutes, until the grapes are nicely blistered.
- Plate and Serve: Place the seared halloumi and roasted grapes on a plate. Drizzle the vinaigrette over both and garnish with microgreens. Serve with baguette slices.
