Vegetable Chili

Whether feeding a crowd or keeping things low-key, this Veggie Chili recipe will take your spread to the next level.

Make a delicious, chunky veggie chilli on your Miele Cooktop featuring kidney beans, black beans, and loads of fresh veggies like red bell peppers, broccoli and zucchini. This plant-based dish is sure to be a Super Bowl hit!

Ingredients:

4 zucchinis quartered.
2 white onions diced.
3 red bell peppers diced.
3 stalks celery diced.
3 heads broccoli
2 cans kidney beans
2 cans black beans
2 cans chickpeas
2 cans diced tomatoes.
3 cans crushed tomatoes.
3 tbsp Chili powder
2 tbsp Cumin
2 tbsp Smoked paprika.
2 tbsp Garlic powder
2 tbsp ancho chili powder
3 tbsp Dried oregano
1 tbsp olive oil
Salt and pepper
Water  

 

Preparation:

  1. Add onions to pot and sweat for about 5 mins.
  2. Add spices, and rest of the veg cook for another tender.
  3. Once all vegetables are added to the pot, add the diced tomatoes and crushed tomatoes.
  4. Bring to a simmer and continue to cook for about 10 to 15 mins. Tip: if chili is too thick, add water or vegetable stock to adjust consistency.
