Ingredients:

Nicoise Salad:

400 grams Green Beans
2 cup medium diced Yukon Gold Potato
4 large Eggs
1 cup julienne Red Onion
24 grape Tomatoes cut in half
⅓ cup seedless Black Olives

Dijon Mustard Vinaigrette:

1 Tbsp Dijon Mustard
1 Tbsp freshly squeezed Lemon Juice
3 Tbsp Extra Virgin Olive Oil
2 Tsp finely sliced Green Onion
Kosher Salt for seasoning
Large crystal Sea Salt for seasoning
Freshly cracked Black Peppercorns for garnishing

 

Preparation:

  1. Place beans, potatoes, and eggs on the perforated pan supplied with the Miele combi-steam oven.
  2. the tray in the oven and turn on the steam function to 210 degrees F for 12 minutes.
  3. Once the food is cooked, remove it from the combi-steam oven and allow it to cool fully.
  4. Remove shells from the eggs and cut the eggs in half. Set them aside.
  5. In a clean, dry bowl, whisk together Dijon, lemon juice, oil, and green onion until fully blended.
  6. Season the mixture to taste with kosher salt and pepper. Set the vinaigrette aside.
  7. Place all the prepared ingredients on a plate as pictured above.
  8. Drizzle the entire platter, except eggs and onion, with the Dijon vinaigrette.
  9. Season the entire platter with cracked pepper and large crystal sea salt.
